Air Fry Chicken Thighs w/ Cauliflower Rice

Air Fry Chicken Thighs with Cauliflower Rice Recipe:

Ingredients:

  • 4 bone-in, skin-on chicken thighs

  • 1 teaspoon paprika

  • Salt and pepper to taste

  • 2 cups cauliflower rice

  • 1 tablespoon olive oil

  • 1/2 teaspoon dried thyme

  • 1/2 teaspoon dried rosemary

  • 1/2 teaspoon dried parsley

  • Lemon wedges for serving

Instructions:

  1. Preheat your air fryer to 400°F (200°C).

  2. In a small bowl, mix together paprika, salt, and pepper.

  3. Pat the chicken thighs dry with paper towels. Rub the spice mixture all over the chicken thighs.

  4. Place the chicken thighs in the air fryer basket. Cook for 10 minutes.

  5. Flip the chicken thighs and cook for an additional 10-12 minutes or until the internal temperature reaches 165°F (74°C).

  6. While the chicken is cooking, heat olive oil in a skillet over medium heat. Add cauliflower rice, thyme, rosemary, parsley, salt, and pepper. Cook for 5-7 minutes or until the cauliflower rice is tender.

  7. Serve the air fryer chicken thighs with cauliflower rice and lemon wedges on the side.
